Bhindi Do Pyaza is authentically a punjabi side dish which goes on well with chapathi, roti, naan and so on. Here, in this recipe, as the name itself suggests we use bhindi twice the quantity of onions. I have already published some of the okra recipes like bhindi sambar, sauteed bhindi and so on. Ladies finger is one of the best vegetables for the diabetic people since it is rich in fiber and iron. When this vegetable is chopped, it tends to be very sticky and so it is very necessary to boil it along with tamarind paste or amchur powder .

French beans pallya is authentically a South Indian recipe which could be prepared in a jiffy. This beans pallya recipe is common in every household but recognised by different names. In some parts it is known as beans poriyal, but anyway, the taste does not differ much. We prepare this string beans pallya in two ways out of which, I will share one variety of it today. It is such a versatile side dish that you could eat this with hot rice, tomato saar chapathi, or even with simple and humble curd rice. Here we mix chopped beans with ground coconut, byadige chillies and season it with traditional coconut oil which is very popular in Udupi and other south kanara areas.

Aloo Palak Sabzi is a dry subzi which goes on well with chapathi, puri and other Indian breads. This aloo palak recipe is packed with vitamins and iron contents and so it has a high nutrition value. It is a very easy side dish which takes very little time to prepare. Today I am posting the dry version of palak aloo which can also be prepared in the form of gravy and I will post that recipe in future. Sauteed Jerkins Fry ( Tondekayi Palya )

Jerkins fry is a spicy sauteed vegetable which goes on well with both rice and chapathi. It turns out to be very crispy due to constant frying in a low flame. Here jerkins ( or tondekayi in kannada ) are mixed with red chilli powder and a little bit of salt. Though this side dish is very easy to prepare, it takes a long time for frying the same. Using jerkins, you can prepare the sauteed vegetable in different types and I will be showing them one by one in my upcoming blog posts.

Brinjal Sabzi (eggplant sauteed vegetable) or Badanekayi Palya ( Gulla ) Recipe

Brinjal ( badanekayi ) is commonly known as eggplant in all the parts of India. It is available in different shapes like round or elongated, and its color also varies. You get it in green, purple and a different form of brinjal called matti gulla,which is available only in south kanara (around mangalore ). It has a slightly different taste. Brinjals can be cooked in various forms like grilling, baking, stir-fry, and so on. Since this vegetable contains lots of fiber and is low in carbohydrate, it is very helpful in controlling the blood sugar level. And also it has a very low glycemic index level.  It contains lots of vitamins, minerals and potassium. This recipe ( mangalore style )which I have mentioned below can be done from either round  shaped or elongated shaped brinjals.

HeereKai ( Ridgegourd or Turai) Palya / Sabzi Recipe

Ridge gourd also known as turai or heerekai ,is green in color and pulp is white.It is low in fat and cholesterol. It has excellent cooling properties and dietary fiber in it. If wrapped properly in a plastic cover it can stay crisp for a week. It lowers the blood sugar level and helps in reducing weight loss and even helps in curing piles. It is often said by experts that it is always better to have a glass of ridge gourd juice in the mornings ( of course, the kids do not like the taste :)  ) so that your immune system gets strengthened against most of the infections. It acts as laxative and helps in constipation. It is good for eye sight

Some ridge gourds are bitter in taste and some are sweet. So, it is always better to check it once before you use it as an ingredient in your recipe.. It goes well with both chapathi,puri and also with rice.
