Amla ( Nellikai / Gooseberry ) Pickle Recipe

Today, let me post an additional recipe to the pickle section of KitchenMasti which is very nutritious and healthy.  It is a pickle prepared out of amla or gooseberry or nellikayi. It is believed that amla has many medicinal values which helps delaying the aging process, delaying wrinkles and prevents premature greying of hair. Nowadays, it is quite common to see younger generation with grey hair, so, regular intake of amla may be quite helpful. To prepare amla pickle, you have to prepare a pickle powder which I have already published in one of my previous blog posts. Here you will have to mix the amla with the pickle powder and use it whenever necessary.

Pickles, which usually accompanies curd rice, gruel riceparathas, dosa, idli etc can act as a substitute for many dishes. Usually, pickles in India are made during summer season since it is the season of mangoes and, above all, unlike winter season, there are no chances of damp weather which will lead to formation of fungus in the pickles. Pickles can be prepared using many different ingredients like mangoes, lemon , amla, mixed vegetable, tomatoes and so on. In olden days, preparing pickles was a common practice but now since many manufacturers have converted this into a business, different types of pickles are reigning the markets. Also, preparing this pickle in an old traditional way is really a tedious process which requires a lot of caution and patience. The pickle powder which I am publishing today is a simple and easy one.You can prepare this powder in advance, and later on, you can mix it with any vegetable of your choice

Mango Pickle Recipe

Mango pickle is by far, one of the most popular pickles. It is usually consumed along with curd rice or parathas. Different types of pickles can be prepared like lemon, mango and mixed vegetable are some of the varieties. Usually, pickles are spicy and sometimes even sweetish. The pickle recipe which I have shown here below is made out of mango. Mangoes, supposed to be known as the king of fruits is used in many dishes. Here, I have used green raw mangoes which is plenty in vitamin-C. It is believed that the vitamin-C present in mangoes protect our body from many infections and it is also a preventive measure for cancer. Pickles consumed in moderate quantities, on a daily basis is OK. But consuming in larger quantities could be dangerous. Some pickles are high in sodium which is very bad for our health. In olden days, mangoes were fermented in a natural process, but now people usually use vinegar and prepare. The pickle which I have shown here cannot be preserved for a long time. However, you can keep it in the fridge and can use it for a month or so.
