Idli - Hotel Style Recipe

Idli is a South Indian healthy breakfast which is an ideal food for both kids and adults. Here, basically rice is mixed with black gram and the batter is formed and steamed in small idli moulds which is easily available in all the super markets. Idly can have many variations such as rava idli, rava urad idli,  oats idli, poha idli, button idli, and so on. If Idli batter is poured in big cups and steamed. then it will be known as kadubu which I have already shown in my previous posts. It can also be steamed in moulds prepared from jackfruit leaves popularly known as gunda.

How To Prepare Idli - Hotel Style.


This healthy breakfast requires the rice and urad dal ( black gram ) to be soaked for around 1 hour, 40 minutes for grinding the batter and should be left overnight for fermentation.

Ingredients for Idli.


  • Idli Rice - 2 cups
  • Urad dal (black gram ) - 1 cup
  • Salt - as required.

Method To Make Idli.


  • Wash both urad dal and rice , soak it separately for around 1 hour.
  • Later on, grind the urad dal by adding water at regular intervals till a smooth batter is formed.This process takes roughly around 30 minutes.
  • Transfer it into a big vessel.
  • Now grind the rice coarsely for around 10 minutes.
  • Mix both the ground batter.and add salt. 

  • Close the lid and allow it to ferment overnight.
  • Heat an idli cooker with 2 cups of water at the base.
  • Meanwhile grease an idli stand. and fill the idli moulds with the batter and place it in the idli cooker. Close the lid.
  • Steam it for around 10 to 12 minutes.
  • De-mould the idlis from the stand and transfer it to the serving plate.

Your healthy and tasty idlis are ready to be served.!!!

Kitchen Masti Points.


  1. As far as possible use only idli rice for best results and not dosa rice.
  2. Grinding half an hour is very important to get spongy and soft idlis.
  3. You can add 1 / 2 cup of boiled rice while grinding the batter in order to get softer idlis which is mostly done in hotels and restaurants. This is actually the main reason for soft idlis.
  4. Half tsp methi seeds ( fenugreek seeds ) can be added for a nice flavor. ( Optional ).
  5. However, soda is also added in hotels and restaurants, but if you follow the above tips, soda is not at all required.
  6. Idlis are relished usually with a dollop of butter, coconut chutney, sambar or menaskayi ( raw mango curry )

What is different between idli rice and dosa rice

Hi darsh,

Idli rice is small in size whereas dosa rice is elongated. There is some difference in texture and taste too...
