Dhaba Style Paneer Masala Recipe

I am pretty sure that most of you might have visited and tasted the food on the dhabas that are located on the highways or on the outskirts of the town. The gravies and curries that are served in the dhabas have a unique taste which remind us of a rustic punjabi khana. This paneer curry goes on well with plain chapathis, puris, rotis or kulchas. Here, in this gravy, one of the special feature is that we use besan to thicken the gravy which gives an awesome taste. I have already published some of the paneer recipies in my previous posts and this paneer curry is an addition to the list.

How To Prepare Dhaba Style Paneer Recipe

The time taken to prepare this cottage cheese curry is around 20 minutes and the quantity mentioned here is enough for 4 servings.

Ingredients For Paneer recipe


  • Paneer ( cottage cheese ) - 200 gms.
  • Salt - 2 tsp.
  • Onions - 2.
  • Ginger - 1 inch.
  • Garlic - 2 cloves.
  • Tomatoes - 2.
  •  Gram Flour - 2 tsp.
  • Fenugreek leaves - 1 tsp
  • Yogurt - 1 / 2 cup.
  • Red chillis ( byadige ) - 3.
  • Cinnamon sticks - 1 inch.
  • Cloves - 3.
  • Black cardamom - 2.
  • Green cardamom - 2.
  • Black pepper corns - 1 tsp.
  • Coriander powder - 2 tsp.
  • Jeera powder ( cumin powder ) - 1 tsp.
  • Red chilii powder - 1 tsp.
  • Turmeric powder - 1 / 2 tsp.
  • Water - 1 cup.
  • Ghee - 1 tbsp.
  • Butter- 2 tbsp.
  • Bay leaf - 2.
  • Green chillis - 2.

Method To Make Dhaba Style Paneer Gravy



  • Heat a pan and dry roast besan on medium heat for 5 minutes till the raw smell disappears.
  • Keep it aside on a plate.
  • Place the pan back on the stove with 1 / 2 tsp of butter and 1 / 2 tsp of ghee in it.
  • Add red chillis, black cardamom, green cardamom,cinnamon, and cloves into the pan.
  • Fry for 2 minutes on a low flame and set it aside. When cooled, powder it in a mixer.
  • Now heat the pan with the remaining butter and ghee in it.
  • Add the chopped onions and fry till the onions turn translucent.
  • Add the chopped garlic and the ginger, chopped into julienne.
  • Mix in the tomatoes which are pureed and add the required amount of salt into it.
  • Now add the bay leaf, coriander powder, red chilli powder, jeera powder, turmeric powder and mix it well.
  • Mix in the roasted and powdered ingredients and fry for a minute.
  • Later on add the yogurt and fry till the ghee floats on the top.
  • Now add the roasted gram flour and green chillis.
  • At this stage you can add water according to the consistency of the gravy.
  • Add the powdered fenugreek leaves and mix it well.
  • Now add the paneer which is immersed in the luke warm water and mix it well.

Your spicy and rich dhaba paneer curry is ready to be served!!!

  1. See to it that while roasting the besan, it does not get charred.
  2. You may add more butter for a richer taste.
  3. If you wish for a more spicier gravy, increase the quantity of red chilli powder.
  4. As far as possible use fresh paneer for a tasty gravy.
