Sauteed Jerkins Fry ( Tondekayi Palya )

Jerkins fry is a spicy sauteed vegetable which goes on well with both rice and chapathi. It turns out to be very crispy due to constant frying in a low flame. Here jerkins ( or tondekayi in kannada ) are mixed with red chilli powder and a little bit of salt. Though this side dish is very easy to prepare, it takes a long time for frying the same. Using jerkins, you can prepare the sauteed vegetable in different types and I will be showing them one by one in my upcoming blog posts.

How To Prepare Spicy Sauteed Jerkins.

This dish is simple to prepare and the time consumed for preparing this is around 30 minutes.The quantity mentioned here is enough for 3 servings.

Ingredients For Sauteed Jerkins.

  • Jerkins - 1/2 kg.
  • Salt - as required.
  • Red chilli powder - 2 tsp.
  • Amchur powder ( Dry Mango Powder ) - 1 / 2 tsp.
  • Oil - 2 tbsp.
  • Mustard seeds - 1/2 tsp.
  • Turmeric Powder - 1 tsp

Method To Make Sauteed Germans.


  • First and foremost wash the vegetable thoroughly under the running water.
  • Now chop it into thin circles.
  • Heat a pan with oil in it.
  • When heated, add mustard seeds and chopped jerkins and keep stirring at regular intervals.
  • Fry it in medium flame for around 25 to 30 minutes till the vegetables are fully roasted.
  • Now add salt, turmeric powder, chilli powder and amchur powder and mix well so that the chopped vegetables are completely coated with spices.
  • Switch off the flame and transfer it to the serving bowl.

Your spicy sauteed jerkins is ready to be served.

  1. The complete secret of the recipe lies in frying the vegetable. It should turn crispy in texture so fry it in a very low flame.
  2. You can add 1 string of curry leaves also.
  3. You can add green chilli if you wish it to be more spicier.
  4. A  pinch of garam masala also can be added but it is purely optional.
