( Mint ) Pudina Chutney - 3 Varieties (Spicy Green Chutney for Chaats)

Pudina chutney ( Mint  chutney ) is one such chutney which goes well with many dishes  like idli, dosa , starters and so on. I have shown 3 types of pudina chutney over here. Pudina leaves are very good for health.and it is available in the market throughout the season. You can grow it in your own garden by planting in small pots too. The aroma of this is so strong that all types of flies and other insects can be restricted from entering your kitchen if you keep it in a bowl and place it somewhere inside your kitchen .

How To Prepare Pudina Chutney.



Type 1 This type of chutney goes well with idli , and dosa


Ingredients for Pudina Chutney.


  • Pudina leaves - 10.
  • Coconut scrapings - 1/2 cup.
  • Green chillies. - 6.
  • Tamarind - small marble sized.
  • Salt  - As required.
  • Asafoetida - a small pinch.
  • For tadka ( seasoning ) - 1 broken red chilli ,1 tsp urad dal  ( black gram ), 1 tsp mustard seeds, a few curry leaves, oil - 2 tsp.

Method To Make Pudina Chutney.


  • Discard the stem and remove the leaves of the pudina.
  • Wash it thoroughly.
  • Mix pudina leaves, coconut scrapings, salt, green chillies , asafoetida , and tamarind into the mixer jar.
  • Now run the mixer with 1/4 cup water inside till the chutney is smoothly blended.
  • Transfer it in to a bowl.
  • Prepare the tadka or seasoning.
  • Heat a small pan with oil in it . Add broken red chilli, urad dal ( black gram ) mustard seeds and curry leaves in it.
  • When the oil starts to splutter, transfer into the chutney bowl.

So,  one type of pudina chutney is ready to be served..

Type 2 - Meant For Different Chaats and Snacks.

Pudina Chutney

Ingredients 


  • Pudina leaves - 15 
  • Salt .- as required.
  • Green chillies - 6.
  • Jeera seeds ( cumin seeds ) -1 tsp.
  • Black salt -1/2 tsp.
  • Amchur powder ( Dry Mango Powder ) - 1/2 tsp


Method to Prepare Pudina Chutney.


  • Take a mixer jar and add washed pudina leaves , salt, green chillies, jeera ( cumin ) seeds, amchur powder and black salt into it.
  • Run the mixer till the mixture is smoothly blended..

Later on transfer it to the serving bowl.


Your second type of pudina.chutney is ready to be served.


Type 3 - Meant For Panner Tikka and similar Tandoori Starters

Pudhina Chutney

Ingredients


  • Pudina leaves 15 .
  • Green chillies - 3. 
  • Yogurt - 1/2 cup.
  • Carom Seeds ( oma or ajwain ) 1/2 tsp.
  • Salt - as required 

Steps To Make Pudina Chutney.


  • Clean the leaves thoroughly and discard the stem.
  • Grind it along with green chillies,  salt,  Carom Seeds ( oma or ajwain ), and yogurt in a mixer jar till the mixture is properly blended.
  • Transfer the chutney into the serving bowl.
  • See to it that this type of chutney is not too watery.

Your third type of pudina chutney is ready to be served.

  1. Never store the pudina chutney for long hours.
  2.  In case if you want to store it for a long time, then preserve it in the fridge.
