Goli Baje / Mangalore Bajji / Maida Fritters Recipe

Goli baje well recognized as Mangalore bajji, is a famous snack originated in Mangalore and other coastal cities in Karnataka. It is available in many restaurants but preparing it in our own kitchen and relishing the crispy bonda ( fritters ) is simply mind blowing. Basically, it is a snack which is very easy to prepare and having it along with a cup of coffee or tea during the rainy monsoons is next to heaven. Here, we mix maida ( all purpose flour ) along with chillis and ginger and form a batter with curds and deep fry them till it turns crispy.

How To Prepare Goli Baje / Mangalore Bajji .

The time taken to prepare this  recipe is around 30 minutes and the cooking time is around 15 minutes.

Ingredients For Goli Baje / Maida Fritters.

  • Maida ( all purpose flour ) - 1 cup.
  • Rice flour - 1 / 4 cup.
  • Butter milk - 1 / 2 cup.
  • Water - as required.
  • Curry leaves - 1 string.
  • Coriander leaves - a few sprigs .
  • Ginger - 1 1 / 2 inch.
  • Cooking soda - 1 / 2 tsp.
  • Oil for deep frying.
  • Salt - As required.
  • Sugar - 1 / 2 tsp.
  • Green Chillies - 5

Method To Make Goli Baje.


  • Take a big mixing bowl.
  • Add maida, salt, butter milk, rice flour, chopped curry leaves, ginger, green chillis, coriander leaves and sugar.
  • Add water accordingly so that the batter is thick as that of idli batter ( i,e in semi solid consistency. ).
  • Keep the batter aside for around 3 hours.
  • After the stipulated time, heat a deep pan filled with oil for deep frying the fritters.
  • Now add cooking soda to the batter and mix well. Keep it aside for around 5 minutes.
  • Meanwhile the oil will be ready for frying the fritters.
  • Now dip your fingers in cold water kept in a bowl.
  • Form a small goose berry sized ball from the batter and drop it carefully in the oil for deep frying.
  • Stir the balls at regular intervals till it turns golden and crispy.
  • Now remove the goli baje from the oil and place it on an absorbent tissue paper.

Your crispy and yummy goli baje is ready to be served.!!!!!.

  1. See to it that the batter is thick.
  2. Consumption of oil will be more if the batter is too watery.
  3. In case the batter turns out to be watery, add some more maida.
  4. Chopped onions can be added for a unique taste but the authentic recipe is void of onions.
  5. Adding butter milk over curds is ideal for the recipe, but in inevitable conditions you can add curd.
  6. See to it that the curd is not too sour.
  7. Coconut chutney is an ideal chutney along with this goli baje for an awesome taste.
