Cheese Dosa Pizza, which I am posting today is exclusively a kids favourite. I am pretty sure that the kids would love to have this festive breakfast and satiate their taste buds. Here, a Plain Dosa is prepared and topped with mozzeralla cheese along with a few chopped onions and green chillis. You can also prepare this cheese dosa by using uthappa batter, but the important aspect is that the dosa base should be pretty thick in size. You can prepare and serve this dosa during your kids birthdays which would be exotic and thrilling for them. Basically,  cheese is produced out of milk where you acidify the milk with vinegar or lemon and then separate the liquid and the hard substance obtained out of it is known as cheese. Different variety of cheese are thronging the markets and to mention a few of them are Parmesan, Mascarpone, Mozzarella, Monterey Jack, Cheddar and so on. It is prepared using cows, buffaloes, goat or sheep milk. It is rich in proteins and fat and is an ideal left over recipe.

Dosa Chaat Recipe

Today I am publishing this fusion dish which is a tangy lip smacking breakfast cum chaat i,e Dosa Chat. Dosa, basically a south Indian breakfast is slowly gaining recognition in the global kitchen and which could give run for money to the street chaat vendors. Many varieties of dosas can be prepared, of which, I have already posted a few like Plain Dosa, Masala Dosa, Cucumber Dosa, Fenugreek Dosa and the list goes on. It is a pancake which is rich in carbohydrates and protiens. I have published some instant variety of dosas prepared out of different flour like Ragi Dosa, WheatFlour Dosa, and so on. The batter being used today to make the Dosa Chat is the same batter which is used to prepare the Uttappa. This recipe can be categorised as a left over recipe. When you are left with lots of batter and bored of preparing the same dosas, you can try out this Dosa chaat and cast your spell on others. It is one of the best evening tiffin recipes.

Set Dosa Recipe ( Soft Sponge Dosa )

There are different varieties of dosas out there. Set Dosa is an ideal breakfast recipe which is very popular in most of the houses in South India. It is nutritious like any other dosas because of the presence of lentils. You can relish this dosa along with coconut chutney, veg kurma and even any spicy pickles if you are lazy to prepare any side dish. I have already published the vegetable sagu recipe recently. It is an ideal set dosa sagu recipe. Usually 3 dosas are stacked together in restaurants, henceforth it has derived its name as Set dosa. Here, we prepare the set dosa batter by grinding rice along with black-gram dal and fenugreek seeds followed by 8 hours of fermentation of batter and forming a small 5 inch sized pancakes. Few people refer to Set Dosa as sponge dosa too. So, the sponge dosa recipe is as follows :

Urad dal - Semolina Dosa Recipe

This dosa batter is prepared out of mixing urad dal and semolina and hence it is named as urad - semolina or rava dosa. Here, fermentation is not necessary for the dosa batter, so you can do it whenever it is required. It tastes best when it is hot and can be relished along with coconut chutney. I have already published in one of my previous blog posts about urad and ragi dosa and so in this recipe we replace Ragi with rava.

Bread fruit dosa tastes almost similar to fenugreek leaves dosa but here, the dosa tastes more awesome due to the spongy texture of the bread fruit. This vegetable is seasonal, hence you cannot prepare it all the time.You can even prepare fritters and curry out of this vegetable. It is slightly fleshy in texture and tastes quite awesome. Here, a batter is prepared out of rice, coconut scrapings, and some spices. The breadfruit is dipped in this batter and roasted on a dosa pan. It would make a healthy and sumptuous breakfast.

Wheat flour dosa is the easiest of the dosa varities which can be instantly prepared unlike other dosas where in,  you would have to soak and grind. It is indeed very nutritious and the health conscious people need not worry about calorie count. All that is required to prepare this dosa is some wheat and small rava / semolina ( chiroti rava ) along with some green chillies to make it spicy.

The dosa recipe which I am posting today is one of the most healthy and tastiest breakfast recipe filled with vitamins and carbohydrates. It is nothing but methi ( fenugreek ) leaves dosa. Methi leaves, also known as fenugreek leaves grows from the methi seeds which has highly medicinal values. As far as possible, one should try to incorporate the methi leaves in our daily food. A variety of dishes can be prepared using methi leaves like methi roti or tepla, methi seeds dosa, methi thambuli, methi leaves rice, adai dosa, and the one which I am publishing today i,e methi leaves dosa. Here you have to prepare a batter of rice, mixed with spices to which methi leaves are added to it.

I have already posted a dosa recipe prepared out of Fenugreek leaves and I was overwhelmed by the response. So today, let me post another recipe related to fenugreek. This is a dosa / pancake prepared out of rice mixed with fenugreek seeds and a little coconut scrapings. In fact, it is a well known aspect that methi seeds should be consumed by the diabetic people since it helps in regulating blood sugar, so I think it is a novel idea to use it in your daily food by preparing this methi seeds dosa.

Avalakki dosa or a dosa prepared out of commonly known as poha or beaten rice is very sumptuous when eaten. It is a batter prepared out of rice mixed with poha and coconut scrapings. It is a bit different from Urad ( Black Gram )  dosa but will remind you of set dosa .This dosa will turn out to be very soft in texture and full of small pores all over it.

I have already given the recipe of ragi roti in one of my previous blog posts. Today I am going to share the recipe of ragi dosa. This is another option for an healthy breakfast and can be cooked very quickly. Children may not prefer to have this, since it is slightly black in color. You can give a twist to this ordinary dosa by stuffing it with spicy masala which I will be publishing it shortly in one of my  future blog posts.

Masala Dosa commonly recognised as Mysore Masala dosa is a favourite among many in the breakfast menu in South India. This dosa is famous for its color texture and, above all, for its rich taste.

I have shown you one of the easiest and the best methods out there. You can use both raw rice as well as rice flour for preparing the dosa. Uthappam is nothing but a dosa in a different style. However, there is a slight variation in the measurement of ingredients. Uthappa is almost like an Indian version of pizza. You can prepare this dosa with a variety of toppings like onion, capsicum and paneer, corn toppings and so on which I have shown in detail. This Uthappam is almost like a full meal. It is healthy and nutritious also since it contains Urad dal ( Black Gram ). Urad contains lots of proteins and is very beneficial for a vegetarian diet. Adai dosa is one of the most common breakfast recipe everywhere in south India. It is a very nutritious dosa because the batter comprises mainly many types of dals and rice. So, this dosa is filled with carbohydrates and proteins which our body requires the most. So, if your children fuss over eating rice, you can prepare this dosa and feed it to them. It is almost like a full meal. I have also added fenugreek / methi leaves which is again, a rich source of iron for the body. It is a laxative and thereby relieves the problem of constipation.
