Pumpkin Soup Recipe

Pumpkin is one such vegetable which many people dislike but I am sure you will relish this hot creamy soup. There are quite a few types of pumpkins. Here I have used the red one. You can even prepare various other curries out of this pumpkin. And the special factor is that.you can even prepare some sweet dish out of it too..

HOW TO PREPARE PUMPKIN SOUP

The time taken to prepare this soup is around 30 minutes and the quantity mentioned here is enough for 4 persons.

METHOD TO MAKE CREAMY PUMPKIN SOUP.



INGREDIENTS FOR THE SOUP.


  • Red Pumpkin - 3 / 4 Kg.
  • Cream - 1 / 2 Cup.
  • Salt - 2 Tsp.
  • Pepper - Powder - 2 Tsp.
  • Milk - 2 Cups.
  • Onion - 1 / 2 
  • Garlic - 1 Clove.
  • Butter - 2 Tbsp.


METHOD TO MAKE THE SOUP



  • Remove the outer covering of the pumpkin with a knife and roughly chop it into 1 inch blocks. 
  • Boil it in the pressure cooker until 1 whistle
  • Keep it aside. 
  • Heat a small pan and add a dollop of butter into it.
  • When melted, add finely chopped garlic and onion into it and saute it for a few seconds.
  • Later on, grind the cooled pumpkin pieces and the fried ingredients in the mixer jar and puree it smoothly.
  • Now, heat a deep panned vessel and add the puree, salt and pepper and allow it to boil.
  • Finally, add boiled milk and let it simmer for a while
  • Switch off the flame and enrich the soup with fresh cream
  • Now serve your loved ones with this rich creamy hot pumpkin soup.

KITCHENMASTI POINTS


  1. If you are diet conscious, you can ignore the fresh cream
  2. You can replace milk with skimmed milk if you find it too heavy
  3. A pinch of oregano can be added for a unique taste..
  4. Garlic is optional
