Pani Puri / Golgappa Recipe

Pani puri lists the top among the junk food menu and is loved by many chaat lovers. Initially, pani puri was available only in few cities like Delhi, Bombay, Calcutta and other metro cities but now it has become so famous that its popularity has spread globally. It has been recognized with different names in each city like pani puri, golgappa and so on. The recipes differ accordingly with the areas. Here, small puris are stuffed with fillings prepared out of aloo ( potato) or white peas, and mixed with green chutney and sweet chutney, along with freshly chopped onions and coriander leaves.

How To Prepare Pani puri / Golgappa.

The time required to prepare this chaat is roughly around 30 minutes.

Ingredients For Pani puri.


  • Small Puris - 20.
  • Potato - 3.
  • Coriander leaves - 1 / 2 cup.
  • Onions - 1 cup.
  • Chaat Masala - 2 tsp
  • Black salt - 1 / 2 tsp.
  • Sweet chutney - 4 tbsp.
  • Sev - 1 cup.
  • Salt - as required.
  • Water - 4 cups.
  • Jaggery  - 3 tbsp
  • Crushed Dates - 2 tbsp.
  • Tamarind Juice - 5 tbsp.
  • Roasted Jeera Powder - 2 tbsp

Method To Make Pain Puri.


  • Prepare the green chutney ( Pudina Chutney ) . I have already published this recipe in one of my previous blog posts.
  • Prepare the sweet chutney. For this mix jaggery, dates paste and tamarind juice along with 1 cup of water and allow it to boil. Add salt ( 1 tsp ) and allow it to boil for 20 - 25 minutes. Keep it aside.
  • Boil the potatoes in the cooker till 3 whistles.
  • When cooled, mash it well.
  • Add 1 / 2 tsp salt, 2 tsp green chutney, 1 / 2 tsp black salt and 1 / 2 tsp chaat Masala. Mix it well.

For Preparing the pani. ( diluted spicy pudina water ).

  1. Take a bowl.
  2. Add the pudina chutney and water into it.
  3. Add black salt, chaat maasala, roasted jeera powder.


  • Assemble all the Puris on the serving plate while serving.
  • Break the puris in the centre as shown in the pic.

  • Spoon a small portion of potato filling inside these small puris.
  • Dot a pinch of green chutney inside all the puris.
  • Pour 1 tsp of spicy pani.
  • Mix in 1 / 2 tsp of sweet chutney inside every puri.
  • Garnish with chopped onions, coriander leaves.
  • Finally add the sev.


Your spicy and tempting pani puri is ready to be served.!!!.

Kitchen Masti Points.


  1. You can serve the pani puri in another way also. Instead of filling the puris with the pani while serving, you can fill the potato fillings and serve green pani and sweet chutney in different bowls.
  2. You can omit onions if necessary.
  3. Instead of potato fillings, you can prepare the filling out of boiled white peas and the remaining masala.
  4. Puris can be prepared at home or bought from the shops where it is easily available.
  5. The quantity of green chutney and sweet chutney can be altered as per your taste.
