Spring Roll Dosa Recipe ( Pancake )

Spring roll dosa ( Pancake )  is a special dosa which is available at all leading restaurants in India. The right way to describe it is as masala dosa with a different filling. It can be prepared during special occasion and it makes a sumptuous meal. The recipe goes as follows

How To Prepare Spring Roll Dosa

Grind the batter on the previous night itself and it should be kept aside overnight for fermentation.

Ingredients For Spring Roll Dosa


Ingredients For The Dosa Batter


  • Raw rice - 1 cup
  • Urad dal ( black gram ) - 3 tbsp
  • Bengal gram dal - 2 tbsp
  • Chiroti rava ( semolina or small rava ) - 1 tbsp
  • Salt - as per requirements
  • Oil - 1 tsp
  • Sugar - 1 tsp
  • Toor dal ( pigeon pea ) - 1 tbsp
  • Fenugreek seeds ( methi seeds) - 1 tsp
  • Red boiled rice - 1 hand full
  • Baking Soda - 1/2 tsp


Ingredients For The Filling


  • Cabbage - 1 cup
  • Carrot - 2
  • Onion - 1
  • Capsicum - 1
  • Green chillies - 2
  • Coriander leaves - 3 to 4 strings
  • Salt - a pinch
  • Cheese cubes - 2


Ingredients For Spinach Puree


  • Spinach ( palak ) leaves - 1 big bunch
  • Garlic - 2 cloves
  • Green chilli - 1
  • Salt - a pinch



Method To Make Dosa Batter


  • Soak the rice separately for 3 - 4 hours.
  • In another bowl, soak urad ( black gram ), fenugreek seeds ( Methi Seeds ), Bengal gram dal, toor dal separately for 3 - 4 hours.
  • Soak red boiled rice in hot water for 7 - 8 hours.
  • Firstly Grind all the dal items along with red boiled rice in a mixer or in a grinder to get a smooth consistency by adding water at regular intervals.
  • Later on, add rice and continue grinding till the batter reaches a smooth consistency.
  • Now transfer it to a vessel.
  • Add salt, oil and sugar in to it.
  • Keep it aside overnight for fermentation.
  • Add semolina ( small rava ) and baking soda into the batter in the morning.

Now your dosa batter is ready.

Method To Make Filling


  • Chop cabbage, onion, capsicum, green chilli, coriander leaves and grate the carrot.
  • Heat a pan with two tbsp of oil in it.
  • Add all the chopped vegetables, salt and grated cheese cubes.
  • Saute for a minute and switch off the flame.
  • The filling is ready.


Method To Make Spinach Puree


  • Boil the hot water and add the washed spinach leaves in it.
  • Close the lid and keep it aside for ten to fifteen minutes.
  • Once the spinach leaves are cooled, transfer it to a mixer jar.
  • Add green chilli, garlic and salt into it.
  • Run the mixer without adding water till the spinach leaves are smoothly blended.
  • Transfer this paste to a bowl.

The puree is now ready.

Now, let's prepare Spring Roll Dosa


  • Heat a non - stick tawa or a  griddle and slightly grease it with oil.
  • Now, pour a ladle full of batter onto the pan and spread it in a circular motion from the center towards the edges of the tawa.
  • Spread one tbsp of spinach puree lavishly all over the dosa followed by one tsp of oil all over it.

  • Roast it for one minute till it turns crisp.
  • Place two tbsps of the filling all over the dosa and roll it on to the other side as shown.

  • Transfer the dosa onto the serving plate.
  • Serve it with garlic chutney or coconut chutney.

Your spicy stuffed spring roll dosa is ready to be served.!!!

Kitchen Masti Points

  1. Instead of semolina, you can add one tbsp of rice flour into the batter.
  2. The batter should be fermented well or else the dosa might not turn crispy.
  3. You can add ghee instead of oil for a richer taste.
