Brinjal VangiBath Recipe ( Egg Plant )

Vangibath can be prepared in two ways, either out of semolina or out of rice. Brinjal is used in both the varieties. However, capsicum can also be used, but that is something that I will be showing you in one of my future blog posts.
Brinjal Vangibath is purely a south Indian variety and is prepared during special occasions also. Now let us prepare Brinjal Vangibath.

How To Prepare Brinjal Vangibath.

The ingredients mentioned here is enough for three servings.

Ingredients For Brinjal Vangibath.


  • Rice - 1 cup.
  • Brinjal / Eggplant (long variety) - 3
  • Green peas - 1/4 cup.
  • Coconut scrapings - 1 tbsp.
  • Cinnamon - 1 inch stick 
  • Fenugreek seeds ( Methi Seeds ) - 1/4 tsp.
  • Jeera seeds ( cumin seeds ) - 1/2 tsp.
  • Coriander seeds ( Dhania ) - 1 tsp.
  • Red chilli ( byadige) -  5
  • Curry leaves -  a few.
  • Salt - as per requirement. 
  • Turmeric powder - 1 tsp. 
  • Green  chillies - 1
  • Asafoetida - a small pinch.
  • Tamarind Juice - 1 tbsp
  • For Tadka / Seasoning - 1 broken red chili, 1 tsp urad dal ( black gram ), 1/2 tsp mustard seeds, 2 tbsp Oil and a few curry leaves.


Method  To Make Brinjal Vangibath. 


  • Boil the rice separately and keep it aside so that it gets cooled.
  • Chop Brinjal into small size of around 1 inch pieces.
  • Heat a pan with 1 tsp of oil in it. 
  • Add red chilli, Fenugreek seeds (methi seeds), cumin seeds, Coriander seeds, Coconut scrapings, curry leaves and asafoetida in to it. 
  • Fry for a few seconds and leave it to cool.
  • Take a mixer jar and powder all these fried items in to a smooth powder.
  • Now, take another pan with around 2 tbsp of oil in it.
  • Add 1 broken red chilli , urad dal ( black gram ) , mustard seeds, curry leaves and cashew nuts in to pan and heat it till it crackles.
  • Add chopped brinjal pieces, green peas, tamarind juice, salt and 1/2 cup of water and allow it to boil for around 6 minutes.
  • Keep stirring at regular intervals so that the vegetables does not get charred.
  • Mix in turmeric powder, powdered masala and finally add the boiled rice in it.
  • Mix it well so that the rice gets completely coated with the vegetable mixture.

Your spicy and traditional Brinjal Vangibath is ready to be served.!!!

  1. It tastes best when this rice is prepared with coconut oil but for those who do not prefer the coconut oil flavor, they can use ordinary oil too.
  2. You can add red chilli powder if you want the rice to be more spicy.
